Mexican Stuffed Shells.

Thanks to The Nest I found a recipe for tonights dinner.

I thought it was interesting, a little different and I'm always up for a challenge. So Taco Stuffed Shells it was, but of course I had to change it a little bit.

I didn't use the cream cheese, and just used regular salsa and not the taco sauce (not a big fan)

But in all, I loved the way they came out. And I will make them again.

Here's my "directions"

Cook beef, peppers, onions.



Stuff Shells with meat mixture.


Add Cheese.


Then more cheese (sorry I like cheese)


Add Salsa, and yes more cheese.


Bake and then ENJOY!!

Hats, Hats, Hats,

I love this hat, I think it may be my new favorite thing to knit. I got a request for two hats on etsy, I seached for a pattern and came up with this one.

I can't belive how great it came out and how easy it was to knit. All in all it took about 6 hours of knitting time, so it's a perfect weekend project or if you're really ambitious, a one day project.

So now, one down, one to go and I think maybe one more after that for Me =)

New Year....New Project.

I was doing a little web surfing and came across a little thing that I thought was really interesting.

Project 365.

It's actually a scrapbook project so I've decided to tweak it a little and make it into a blog, and when the year ends make a digital scrapbook.

The whole concept behind it, is to take one picture a day and add them to a scrapbook after 52 weeks, 365 days, you will have your year in pictures.

I can't wait to see what the year will bring.

So here goes.
